Marrow is built around a single wood-fired hearth. No gas, no shortcuts — just oak, oak coals, and a menu that changes with what the coals can do that week.
There's no oven at Marrow. No induction, no sous-vide, no walk-in full of sauces made last month. There is one hearth, fed on hard oak, and every dish that leaves the kitchen has spent time in its heat or its smoke.
It's a harder way to cook. The fire has moods — it runs hotter on dry nights, sulks in the rain, needs different wood for fish than it does for beef. Chef Odalys Reyes built the whole menu around learning to listen to it.
Odalys grew up cooking on a wood stove because it was the only stove her family had — and never quite left it behind, even after culinary school and a decade in kitchens that had every tool imaginable.
Marrow opened in 2018 as an experiment: what happens when a serious kitchen removes everything except fire? Seven years later, it's still the only rule that hasn't changed.
